Ingredients
- 3 X 300g trout
- 50g melted butter
- 450 boiled potato
- chopped parsley
- Sauce:
- 2 tbs dry white wine
- 1 tbs lemon juice
- 1 small shallot
- 1 tbs double cream
- 75g chilled butter

Preparation
Step 1
Preheat over to 200 degrees. Brush trout with half the butter and season.
Warm remaining butter & cook onion.
Add mashed potato, fish, parsley and shape to 5cm thick cakes. Chill in fridge for an hour.
Dust cakes with flour, pan fry till golden and then bake 12-15 minutes.
Sauce:
Add wine, juice and shallot with 3 tbs of water.
Simmer until half reduced and simmer to 1 tbs.
Add cream and simmer.
Whisk butter until smooth.
