Ingredients

  • 1 cup butter, softened
  • 1 cup sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • 3 cups rolled oats
  • 1 cup peanut butter chips
  • 1 teaspoon coarse salt

Preparation

Step 1

Preheat over to 375-degrees.

Step 2

Cream together butter and both sugars in a medium bow.

Step 3

Mix in eggs and then the vanilla.

Step 4

In a separate bow, mix together baking soda, salt, cinnamon and flour.

Step 5

Stir the flour mixture into the butter mixture until combined.

Step 6

Add in oats.

Step 7

Mix in peanut butter chips.

Step 8

Scoop teaspoon-sized balls of dough onto greased cookie sheets and press the balls flat using a fork.

Step 9

Sprinkle less-than-a-pinch of coarse salt over each cookie.

Step 10

Bake for 8-10 minutes.
