- 500g potatoes
- 45g flour
- 90g castor sugar
- 60g butter
- 3 egg yolks

Preparation
Step 1
Put peeled & sliced potatoes in slightly salty water, boil reduce & cook until tender. Drain & push through a sieve in to a pan.
Step 2
Place pan over low heat, add 1tbs flour, 3tbs sugar, 2tbs butter, stir over heat to dry. Cool slightly stir in egg yolks. Add remaining flour. Knead until smooth .
Step 3
Roll out enough dough thin enough to cover a 9cm buttered pie dish.
Arrange sliced apples in to pie, keep a few slices to decorate. Roll remaining dough, cover the apples & flute the edges. Decorate with remaining apple slices
Bake 350F(180C) 40 mins.
Step 4
Combine rest of sugar & butter & melt. Brush top of pie & bake for a further 5 mins.
