Ingredients

  • 500 g Potatoes
  • ½ Figatelli (Corsican sausage)
  • 2 Onions
  • 1 egg
  • 4 tbsp flour
  • 250g Brocciu cheese
  • 15 cl Milk
  • 100 g goat cheese (soft Corsican)
  • clarified butter
  • salt and pepper

Preparation

Step 1

Mix the egg and flour, then stir in the milk and brocciu. Salt and pepper. Cut the goat cheese into small cubes and stir into mixture. Cut the Figatelli sausage into slices after removing the skin. Cut the onions into thin slices. Peel the potatoes and grate them. Heat a little clarified butter in a nonstick pan, add the potatoes (well-drained) and onions. Sauté until golden brown and until the potatoes are almost cooked.

Step 2

Add the figatelli, cook well until a crust has formed. Then pour on the brocciu cheese preparation. Leave to set. Turn the frittata in the pan with the help of a plate and leave on the heat until it's golden brown.
