Gluten-free Apple Carrot Cinnamon Brownies

  • 160 g of soy-flour
  • 150 g of honey
  • 60 g of ground hazelnuts
  • 120 g of peeled and finely sliced apple
  • 80 g of peeled and rasped carrot
  • 1 tablespoon of cinnamon
  • 1 tablespoon of unsweetended cocoa powder
  • 180 g of yoghurt
  • 2 dl of milk
  • 3 tablespoons of flax-seed oil (or any other oil)
  • 80 g of corn-starch
  • 1 tablespoon of baking soda
  • zest of 1 lemon

Step 1

preheat the oven on about 180 °
2. grease the baking tin
3. Mix all the listed products and stir well
4. Fill into the baking tin and bake for about 30-40 minutes (depends on the size of the baking tin)

grease the baking tin very well in order to prevent the dough from sticking to it. Put the brownies into the fridge and enjoy as a breakfast the next day! I do prefer them cold.
