- 125g butter, softened
- 100g light brown soft sugar
- 1 egg
- 35g caster sugar
- 1 teaspoons vanilla extract
- 75g flour
- A pinch of salt
- 1/2 teaspoon bicarbonate of soda
- 150g porridge oats

Preparation
Step 1
Preheat your oven to 180 C / Gas mark 3.
In a bowl, mix together the butter, brown sugar and caster sugar until smooth.
Step 2
Beat in the egg, then stir in the vanilla. Combine the flour, bicarb and salt; stir into the creamed mixture until just blended.
Step 3
Mix in the oats, . Drop spoonfuls spaced apart onto a lightly greased baking tray.
Step 4
Then bake for 10-15 minutes in the oven. Let your cookies to cool on baking tray for five minutes before transferring to a wire rack to cool completely.
