Lime cream cookies

- 75g butter
- 75g of oats
- 100g sugar
- 1 medium egg
- 2 teaspoons flour
- 1 teaspoon baking powder
- For the lime cream
- 1 lime
- 250g mascarpone
- 25g icing sugar

Preparation
Step 1
Preheat the oven to 170 ° C.
With a pencil, trace the outline of two baking trays onto a sheet of baking paper. Cut out the shapes and lay them on the trays.
Step 2
Melt the butter over low heat. Remove from the heat and add the oats. Mix with a wooden spoon.
Step 3
Add sugar and mix. Let it settle for 2 or 3 minutes, until the oats have absorbed the butter.
Step 4
Break the egg into a small bowl and beat it with a fork. Pour it into the oat mixture. Sift the flour and baking powder over the pan into the mixture and mix well.
Step 5
Place four full teaspoons of mixture onto each tray, spacing them out. Place in the oven for 9-10 minutes until the biscuits are golden brown.
Step 6
Leave the biscuits to cool for 5 minutes on the trays. Then put them to cool on a rack. Do not remove the backing paper from the trays. Repeat steps 5 and 6 for the other biscuits. Once all the biscuits are baked, they should all be on the cooling rack.
Step 7
While the biscuits cool, prepare the cream filling mixing all the ingredients together. Then spread the lime cream on the flat side of a biscuit.
Step 8
Apply a second biscuit onto the filling. Assemble all the biscuits in half and press them together quickly, before the cream softens them!
