Oreo cookies

Ingredients
- 190g flour
- 1/2 tsp salt
- 1/2 tsp baking powder
- 110g softened butter
- 85g brown sugar
- 85g sugar
- 1 egg
- 1 tsp vanilla extract
- 50g chocolate chips
- 12 Oreo biscuits (preferably the chocolate coated ones)

Step 1
Beat the softened butter and sugar until creamy. Add the egg and vanilla.
Mix the flour with the salt and baking powder and add to butter and sugar mixture, mixing just enough to incorporate the flour, but don't over mix!
Add the chocolate chips and place the cookie dough in the fridge for half an hour.
Form 24 small balls with the dough and refrigerate again so the dough is not too sticky.
Take a ball of dough and flatten between the palms of your hands. Place an Oreo biscuit in the centre and then with a second ball of dough, cover the Oreo. Pinch the edges together around the edges, completely concealing the Oreo.
Place the cookies in the fridge for at least one hour (they bake better when chilled), then bake them in a preheated oven at 180°C for about 15 minutes. Be careful to space them out on the tray as they will expand during baking.
Remove from the oven and leave to cool on the baking tray, before cooling a further 10 minutes on a cooling rack.
