Step 1

Wash the round courgettes and cut in half to form the two parts of the burger bun. Place in a dish with olive oil, thyme, savory, salt, pepper and Espelette pepper and bake for 20 minutes at 200 ° C

Step 2

Wash the long courgettes and cut in half, remove the seeds. Then cut sticks shaped like chips. Heat the olive oil in a hot frying pan and fry the courgette sticks, making sure they do not burn.

Step 3

Prepare the tomato sauce (instead of ketchup!) by cutting a piece of tomato into cubes, then add salt, pepper and a few drops of olive oil and sherry vinegar.

Step 4

In a bowl mix the minced beef with a few drops of Tabasco sauce, thyme, parsley, salt, pepper and a drizzle of olive oil. Make two beef burgers with the preparation and cook in a lightly oiled pan.

Step 5

Remove the courgette "buns" from the oven and assemble the burger by laying half the courgette, a slice of tomato, the beef burger, tomato and courgette top. Drain the fried courgettes fries on kitchen roll, sprinkle with salt and serve with tomato sauce and the burger.
