Fish - Prawn Pilaf

This is a great and terrifically easy dish, and it can be played about with all sorts of combinations
- 3 tbsp olive oil
- 1 onion finely chopped
- 1 red pepper sliced thinly
- 1 garlic clove crushed
- 225 gm long grain white rice
- 700 ml fish,chicken or veg stock
- 1 bay leaf
- salt and pepper
- 400 gm peeled cooked prawns
- To garnish – a handful of whole cooked prawns
- lemon wedges
- Greek black olives
- Serve with Pecorino cheese to grate over
- Cubes of Greek feta cheese
Fish - Chilli Prawn Pasta

This is a simple prawn dish that took less than 11 minutes – the time the pasta took in fact!
- 120 gm of fab king prawns with the tails on
- One green chilli - deseeded and chopped
- One red chilli – deseeded and chopped
- 3 cloves of garlic chopped finely
- A handful of flat leaf parsley chopped
- A small glass of white wine
- 100 gm of passata or chopped tinned tomatoes
- Olive oil
- 300 gm of fusili and rigatoni pasta
Fish - Creamy Dreamy Salmon Tagliatelle

This is a quick stand-by supper that is simple and delicious!
- 100 gm of smoked salmon cut into strips
- 300 gm tagliatelle
- 25 gm butter
- 175 gm single cream
- Roasted red peppers cut into strips – or you could use them drained from a jar
- Flat leaf parsley chopped
- A little black pepper
Beef - A Little Moroccan Magic

Hereis my version of a Morrocan dish using fabulously underrated shin beef – mine was from those lovely people at...
- 750 gm shin beef fat trimmed off and cut into serious cubes
- 2 small onions chopped
- Bunch of fresh coriander
- Half a butternut squash peeled and cubed
- 400 gm tin chickpeas
- 400 gm tin chopped tomatoes
- 1 tbsp of tomato sauce
- 600 ml of chicken or vegetable stock
- Olive oil
- Spice mix
- 1 tbsp garam masala
- 1 tbsp ground cinnamon
- 1 tbsp ground cumin – I crushed cumin seeds in a mortar
- 1 tbsp ground ginger
- 1 tbsp paprika
- Salt and black pepper
Beef - Spicy Meatballs in a Coconut Curry Sauce

This is absolutely deliciously delicious with an extra slice of deliciousness on top
- Meatball Ingredients
- 500 gm beef mince
- 1 medium onion finely chopped – I whizzed mine in my food processor
- 1 red chilli – deseeded
- and chopped
- Thumb size piece of fresh ginger peeled & finely chopped
- 3 cloves of garlic finely chopped
- 3 or 4 sprigs of fresh coriander chopped finely
- 1 tsp garam masala
- Pinch of salt
- Black pepper
- 1 slice of white bread whizzed in the food processor into crumbs
- 1 small egg lightly beaten
- Ingredients for the curry sauce
- Olive oil
- 1 medium onion whizzed in the food processor
- 3 cloves of garlic crushed
- Thumb size piece of fresh ginger peeled and finely chopped
- 3 tbsps of Thai Red Curry paste
- 2 tsps of curry powder – how hot is up to you!
- 400 gm can of chopped tomatoes
- 250 ml of coconut milk
- 200 ml of chicken stock
- Sour cream or plain yoghurt and some chopped coriander for garnish.
Snacks, Starters, and Nibbles - Basil, Pine nut and Chilli Humdinger Hummus

Hot, hot day. Cat flat out on the flags
- 1 400g can chickpeas
- Bunch of Greek basil – though you could use ordinary
- Glugs of Olive oil
- 1 garlic clove chopped
- 75 gm pine nuts – toasted lightly in a dry frying pan
- Good handful of grated pecorino
- 1 red chilli deseeded and chopped
- Salt and pepper

Salsa...simply Spanish for sauce
- 4 tasty toms -deseeded and chopped
- 1/2 cucumber peeled and deseeded
- 1 red chilli deseeded and chopped
- 1 green chilli deseeded and chopped
- 2 shallots - finely chopped
- Clove of garlic - finely chopped
- Bunch of Greek basil – the one with small leaves, chopped
- Balsamic vinegar
- Decent extra virgin olive oil
- Salt and black pepper

- Portions dependant on number of people
- Mozzarella
- Spinach leaves
- Beetroot

- Balsamic sauce
- Parmesan (optional)

- Block of feta cheese
- Red chilli - chopped and deseeded
- Spring onions - chopped
- Olive oil
- Black pepper over it
- 4 Halved ciabatta rolls.
Soup - Beanz do not have to mean Heinz..Tuscan Soup

This is a recipe I first came across in Tuscany, though I have had similar hearty soups in Rome and Sicily
- 2 tbsp olive oil
- 1 celery stick chopped
- 1 onion chopped
- 1 large carrot chopped
- 1 litre of chicken or veg stock
- 400 gm can of cannellini beans drained
- 400 gm can of borlotti beans drained
- Sprigs of fresh thyme and rosemary
- 1 bay leaf
- 8 rashers of prosciutto – or you could, at a pinch, use streaky smoked bacon
- 4 good Sicilian sausages – or, frankly, any top quality bangers with flavour
