Lamb - Babotie Rhapsody

This is one of those dishes like chilli or spag bol that everyone seems to have their own version of
- A knob of butter
- Splash of olive oil
- 2 red onions chopped
- 2 crushed garlic cloves
- 500 gm minced lamb
- 2 carrots peeled and grated
- 2 tsps of curry powder
- 1 tsp of ground coriander
- 3 tsps of ground ginger
- 1 tsp each of thyme rosemary and oregano
- I tsp of turmeric
- Tsp of cinnamon
- Tsp of sugar
- 1 red chilli deseeded and chopped
- Salt and pepper
- 10 gm of chopped almonds
- 2 slices of crusty white bread - soaked in water then drained and squeezed dry – this is the fun part!
- 15 ml of red wine vinegar
Beef - Full Meat Chilli

have dabbled with different chilli recipes for many many moons – and have tried many many varieties
- 1kg minced beef
- 500gm diced shoulder pork
- 250gm chorizo sliced into chunks
- 500gm borlotti beans or kidney beans or a mix of both
- Olive oil
- 2 large onions chopped
- 3 green chillies deseeded and chopped
- 2 tbsp white wine vinegar
- 2 tsps dark brown sugar
- 2 400gm tins of good chopped tomatoes
- 250 ml beef stock
- 1 cinnamon stick
- 2 bay leaves
- Some dried oregano and thyme
- 3 tbsp of hot chilli powder
- Black pepper
- Fresh coriander
- Soured cream to serve
Chicken - Back Seat Chicken and Rocket Risotto

I do all the cooking normally, but now and then, Jane does me her speciality – a risotto
- 1 onion
- 75 gm unsalted butter
- 400 gm arborio risotto rice
- 2 chicken thighs cooked skinned and meat stripped off
- 1.2 litres of chicken stock brought to a simmer and kept there
- 2 handfuls of rocket roughly chopped
- 2 tsps crème fraîche
- Glass of a good white wine
- 50 gm parmesan grated
- Black pepper
Cheese - Colcannon

Its Irish name is Cál Ceannann, meaning “white-headed cabbage”, and it is a traditional dish mainly consisting...
- 1 tbsp vegetable oil
- 1 onion, finely sliced
- 250g mashed potato (I used about 6 to 8 potatoes so play it by ear)
- 50g unsalted butter
- 30ml double cream
- 250g Savoy cabbage blanched and sliced (or you can used greens or kale)
- 1 tbsp wholegrain mustard
- Salt and ground black pepper
Pork - Spiced Pork Tenderloin in a Red Pepper Cream Sauce

- Ingredients for 4
- Tablespoon each of cumin seeds fennel seeds and fenugreek.
- A grind of pepper a pinch of dried crushed red chilli
- A pinch of dried thyme
- A grind of sea salt
- 500 gm pork tenderloin cut into half inch or 7mm slices
- 2 small red onions finely chopped
- Olive oil and a knob of butter
- 30 ml dry white wine
- About 30 ml of chicken stock
- 1 red pepper deseeded and chopped up into smallish squares
- 150 ml of single cream
- Bunch of fresh coriander chopped
Pork - Cumin Roasted and Fried Squash and Cannellini Beans

I reckon this is a dish I could eat a lot of, and on its own
- 1 butternut squash
- 8 baby new potatoes
- 2 tablespoons of cumin seeds
- 4 halved long shallots
- 400gm tin of drained cannellini beans
- Pinch of a garam masala mix
- 125gm of vegetable stock
- 1 tablespoon of crème fraîche
- Black pepper
- Olive oil
Soup - Beanz do not have to mean Heinz...Tuscan Soup

This is a recipe I first came across in Tuscany, and its warmth permeates every mouthful
- 2 tbsp olive oil
- 1 celery stick chopped
- 1 onion chopped
- 1 large carrot chopped
- 1 litre of chicken or veg stock
- 400 gm can of cannellini beans drained
- 400 gm can of borlotti beans drained
- Sprigs of fresh thyme and rosemary
- 1 bay leaf
- 8 rashers of prosciutto or streaky smoked bacon
- 4 good Sicilian sausages
Soup - Devilled Pepper, Courgette and Ham Soup

This is a great soup with a kick and a sense of heart too
- 1 courgette, sliced and diced
- 1 pepper – mine was yellow
- 2 red onions finely chopped
- 2 garlic cloves finely chopped
- Some dried chill flakes to taste or a chopped deseeded red chilli
- Black pepper
- 1 litre of chicken stock
- Whatever ham you can muster – I used three slices chopped.
- Olive oil
Fish - Smoked Mackerel Dauphinoise

This is one of my favourite comfort fish dishes – one to curl up by the fire with and watch the snow fall outside...
- 600 gm potatoes peeled and sliced – not too thinly!
- 250 gm smoked mackerel – skin removed and flaked
- 2 bay leaves
- 200 ml milk
- 300 gm double cream
- Black pepper
- 1 tbsp grain mustard
Fish - Kedgeree

This is one of those dishes that is great fun to construct – it is a coming together of several key elements – ...
- 3 or 4 free-range eggs
- 600g undyed smoked haddock fillets
- 2 bay leaves
- 180 gm long-grain or basmati rice
- Sea salt
- 50 gm unsalted butter
- Thumb-sized piece fresh ginger, peeled and grated
- 1 medium onion finely chopped
- 1 garlic clove, finely chopped
- 1 heaped tsp garam masala or curry powder
- 1 tsp mustard seeds (optional)
- 1 tsp of cumin seeds
- 1 fresh red chill deseeded and chopped finely
- 1 level tsp of turmeric
- 6 black peppercorns
- Juice of 2 lemons
- 2 handfuls fresh chopped coriander
- Sea salt and black pepper
- Natural yoghurt to serve with
