Brazilian Barbecued Beef

This is one of the best ways there is to cook and eat beef
- A good piece of silverside of beef - all fat removed. A barbecue!
Lamb - Tikka Lamb Leg

The recipe is based on an old one of Mr Oliver’s, though I think he uses a shoulder
- 2kg leg of lamb
- Tikka paste – recipe in a mo..be patient
- Red chiili, deseeded and sliced finely
- 2 garlic cloves finely sliced
- I red onion finely sliced
- Ok- for the tikka paste – you could use a shop bought jar – but why bother? This is funkier and sexier and far far tastier.
- 1 tsp cumin seeds
- 1 tsp coriander seeds
- 2 garlic cloves peeled
- Thumb size piece of ginger, peeled
- 1 tsp smoked paprika
- 2 tsp garam masala
- 1/2 tsp salt
- 3 tsp veg oil or ground nut oil
- 2 tbsp of tomato sauce
- 2 red chillies
- Small bunch of coriander
- 2 tsp ground almonds
- For the salad:
- 1 tsp fenugreek seeds
- 1 tsp mustard seeds
- small handful of dry curry leaves crumbled
- 1 tsp of chutney – I use Mrs Balls but mango chutney would be okey dokey
- 4 poppadoms
- 2 carrots peeled and grated
- 1/2 cucumber
- 1 bunch radishes
- 3 spring onions
- 2 little gem lettuces
- a big handful of cherry tomatoes
- 1 red chill deseeded
- bunch coriander
- bunch of mint
- lemon
Lamb - Lamb on the Rack

Rub lamb with olive oil, salt and pepper
- olive oil
- salt and pepper
- rosemary
- garlic (sliced)
- 3 leeks sliced
- 2 onions sliced
- 6 cloves of garlic
- 1.5 litres of chicken stock
- sprigs of herbs
- chopped flat leaf parsley
- 2 or 3 bay leaves
- 4 tins of flageolet beans – though you could use cannelini too
Rice - Morcilla Puttanesca

And it happened. We all fancied something with bite, something with a kick
- Half a black pudding
- 400gm tin chopped tomatoes
- 1 red chilli deseeded and chopped
- Pinch of dried chilli seeds
- 2 cloves of garlic finely chopped
- 1 red pepper cut into strips
- 2 slices smoked bacon cut into small pieces
- Small bunch of coriander chopped
- Mix of borlotti beans, cannellini beans, kidney beans
- Olive oil
Rice - Rough Weather Risotto

Bliss in a bowl bestowed upon you with basic ingredients that warm and soothe away the aches and melancholy induced...
- 1 onion finely chopped
- 75 gm unsalted butter
- 400 gm arborio rice
- 1 glass of white wine
- 1.5 litres of chicken stock
- salt and pepper
- A handy hatful of spinach washed and chopped roughly
- 60 gm parmesan cheese grated
- 100 gm toasted pine nuts
Rice - Paella con verduras y jamon serrano

I reckon that this is a very healthy dish- I’m not one for adding up this or working out that calory or carb
- 1 aubergine – or eggplant for my US friends! Halved quartered lengthways and cubed
- 1 red pepper – deseeded and cut into squares or strips.
- 1 courgette – or zucchini! – halved, quartered lengthways and cubed
- 6 cloves of garlic
- 400 gm of paella rice – rinsed well under cold water
- 100 gm of serrano ham = cut lengthways down the centre then into strips
- olive oil
- 125 ml of dry white wine – I only had cava in – I drink mostly red – but the cava worked just as well! Decadent!
- 1 litre chicken stock
- Pinch of saffron – or colorante
- Almost a tsp of smoky paprika
- 12 baby plum tomatoes, halved – or you could use cherry toms
- Handful of chopped parsley
Chicken - Khao Man Ghai Sunday

Here it is – a version of a Rick Stein recipe I saw years ago Khao Man Ghai
- 1.5kg free-range chicken
- Freshly ground black pepper
- 3 sticks of lemon grass split
- 5 garlic cloves a red chilli pierced
- Small piece of ginger peeled
- tablespoon of cumin seeds
- 6 spring onions trimmed or 4 small shallots finely chopped
- Handful of roughly chopped fresh coriander.
Desserts - Double Lemon Pudding

- 150 gm unsalted butter
- 265 caster sugar
- grated zest of 2 lemons
- tsp vanilla essence
- 6 eggs separated
- 75 gm plain flour
- 190 ml milk
- juice of 3 big lemons
- cream to serve.

- 250 gm rasbobs
- Zest of 1 cheeky lime
- 125 gm of caster sugar
- 25 gm melted butter
- 25 gm softened butter
- 85gm plain flour
- Pinch of salt
- 1 egg
- 1 egg yolk
- 300 ml of full fat milk – the proper stuff!
