This is a basic sandwich cake with walnuts & a hint of coffee

  • 4oz Self-Raising Flour (4 heaped tablespoons)
  • 4oz Margarine
  • 4oz Castor Sugar (4 rounded tablespoons)
  • 2 Eggs
  • 1 tablespoon Coffee Essence
  • 2oz Chopped Walnuts
  • For the Icing
  • 8oz Icing Sugar. (8 well-heaped tablespoons)
  • 3oz Margarine
  • 1 dessert spoon Milk
  • 1 dessert spoon Coffee Essence
  • Walnut Halves

Preheat the oven to 180 degrees

  • 400g plain white flour
  • 200g barley malt
  • 100g corn oil
  • salt
  • Grated rind of 1 lemon
  • 1 apple
  • 2-3 grated carrots
  • A handful of raisins
  • A handful of walnuts (broken in pieces)
  • 1 sachet of baking soda
  • Pie tin of 26-28cm diameter.
