  • 9 tsp instant espresso powder disolved in 350ml water
  • 250ml baileys
  • 400g lady fingers
  • 2 large eggs
  • 75g caster sugar
  • 500g mascarpone cheese
  • 2 1/2 tsp cocoa powder

Step 1

Mix the coffee with 175ml of the baileys in a shallow bowl
Dip the biscuits into this liquid, let them soak a little but not soggy
Line the bottom of a 22cm square glass dish with a layer of the biscuits
Separate the eggs, but keep only one of the whites
Whisk the two egg yolksand sugar together until thick and paler yellow, then fold in the remaining 75ml of baileys
Add the mascarpone and fold in until smooth
Whisk the single egg white until thick
Fold the egg white into the mascarpone
Spread half of the mixture on top of the layer of biscuits
Repeat with another layer of soaked biscuits and top with the remaining mascarpone mixture
Cover the dish with clingfilm and leave in the fridge for 3 hrs
When ready to serve, dust with cocoa powder
