Mexican tomato rice

  • 1 cup brown rice
  • 250ml vegetable broth
  • 1 can crushed tomatoes
  • 1/2 tsp paprika
  • 1 tsp oregano
  • 2 cloves garlic
  • Dried chilli flakes
  • Pinch of salt

Step 1

Combine broth, tomatoes, salt, oregano and paprika.

Step 2

Rinse the rice under tap water. Sauté the crushed garlic in a tsp of olive oil then pour the rice and the liquid mix.

Step 3

Cover with a lid and let simmer until all water is absorbed.
