Bucnica (Squash Cottage Cheese Strudel)

  • Dough:
  • 400 g (0.9 lb) flour
  • 1 tsp vinegar
  • 1 tsp salt
  • 1 – 1½ cup lukewarm water
  • 500 g (1 lb 2 oz) summer squash, grated
  • salt
  • 500 g (1 lb 2 oz) cottage cheese
  • 1 cup sour cream
  • 50 g (1.7 oz) butter, melted
  • 2 eggs
  • Topping:
  • 1 egg
  • 1 cup sour cream

Step 1

For the dough
Sift flour and salt.
Stir-in water and mix well.
Flour a board, and roll the dough as thin as tissue paper.

Step 2

For the filling
Mix squash and salt. Leave it for about 15 minutes and then squeeze our any remaining moisture.
Add cheese, cream, butter and eggs.

Step 3

Put the filling over the dough.
Roll the dough around the filling.

Step 4

Butter a baking-pan and pop the strudel in. Mix egg and sour cream. Pour over strudel.

Step 5

Bake for 45 - 60 minutes, or until golden.
