Preparation
Step 1
If not prepared, remove eye and score the flesh deeply. Wash and dry THOROUGHLY with kitchen paper
Step 2
When absolutely dry rub generously with salt , including into the scorings
Step 3
Wrap the ear loosely with tin foil, place on wire rack and in roasting pan
Step 4
Cook on maximum heat for 30 mins then turn down to low heat for a further two and a half hours
Step 5
Remove tin foil from ear and return to medium oven for 30 mins
Step 6
Turn oven off, but leave in to rest for approx 15 mins
Step 7
Enjoy!!
