Ingredients
- 4 tbsp Olive oil
- 2 diced onions
- 2 (250g) passatta sauces
- 1/2 jar honey (or to taste)
- 4 Dessert spoons cider wine vinegar
- 4 Cloves garlic (chopped very finely)
- 4 tbsp Worcestershire sauce
- 2 teaspoons ground black pepper
- Upto a 1/4 teaspoon Cayenne pepper

Preparation
Step 1
Finely chop the garlic and onions
Step 2
Heat the oil in a pan and add the onions and garlic, cook until soft
Step 3
Add all the remaining ingredients (leave the cayenne pepper until last, adding tiny amounts at a time, then testing)
Step 4
Simmer for about 20 mins (stir regularly)
Step 5
Using a fine sieve strain the mixture into a bowl to get a smooth sauce then allow to cool before bottling
