Duck breast in orange sauce

- - 4 duck breasts
- - 60 g of butter
- - 4 oranges
- - 1/2 litre of orange juice
- - 5 or 6 oranges
- - 2 tsp caster sugar
- - 2 tsp mustard
- - Salt and pepper

Preparation
Step 1
Peel the zest of one orange being careful to avoid the white membranes. Peel 3 oranges raw, cut into quarters, removing the skins, to keep the breasts. Press 5 or 6 oranges to get 1/2 litre of juice.
Step 2
Cook the duck for 15 minutes in a heavy bottomed pan with butter. Start cooking by placing the skin side in the pan. Salt. Remove and keep them warm, remove some fat if they have made many.
Step 3
Deglaze the duck breasts with orange juice, zest and then add the pieces of flesh. Boil 5 minutes until the sauce becomes syrupy.
Step 4
Then add the sugar, mustard, salt and pepper. Taste and adjust seasoning. Serve with white rice
