Apple and Marrow Chutney

  • 2 lb marrow
  • 1 lb apples
  • 1/2 lb onions
  • 1 pint vinegar
  • 1/2 lb lump sugar
  • a few chillies and peppercorns
  • 2 oz whole ginger (bruised)
  • 1/2 oz turmeric powder
  • 1 tbsp corn flour

Step 1

Peel and cut up marrow into small chunks, sprinkle with salt and let stand for twelve hours.

Step 2

Strain and add chopped onions, apples, sugar and vinegar.

Step 3

Put spices into a muslin bag.

Step 4

Boil for one hour.

Step 5

Mix turmeric powder, and corn flour with a little vinegar. Pour into mixture and boil quickly for five minutes, stirring all the time.

Step 6

Allow to cool before jarring.
