Ingredients
- 1 kg fresh live Scottish Mussels
- 2 tbsp butter
- 1 onion, chopped
- 3 garlic cloves, chopped
- 2 tsp flour
- 1 tsp Dijon mustard
- 150 ml cider
- 15 g fresh parsley, chopped

Preparation
Step 1
Debeard mussels.
Heat butter in large pan, add onion, garlic and dlour.
Saute 1-2 mins, add mustard and cider, whisk until smooth, season.
Step 2
Add mussels, cover and cook on high for 3 mins, shaking the pan occasionally. Remove from heat, sprinkle with parsley and serve with crusty bread.
