Red Lentil and Pepper Bake

  • 6oz/175g split red lentils
  • 1 pint/600ml boiling water
  • 3 tbsp oil
  • 1 large onion
  • 1 green pepper
  • 6oz/175g mushrooms
  • 1 tsp chilli powder
  • ½ tsp Tabasco sauce
  • 1 tsp paprika
  • 1 tbsp tomato puree
  • 2 tbsp soy sauce
  • Topping:
  • 1 oz/25g breadcrumbs
  • 1oz/25g pine nuts chopped
  • 1oz/25g pumpkin seeds
  • 2oz/50g cheddar cheese

Step 1

Put the lentils into a saucepan with boiling water

Step 2

Bring to the boil and simmer gently for 20 minutes until all water is absorbed

Step 3

Heat the oven to 190ºc / 375ºf / gas mark 5

Step 4

Heat the oil and fry the onion

Step 5

Add the green pepper and mushrooms

Step 6

Fry for 10 minutes

Step 7

Add the lentils, chilli powder, Tabasco, paprika, tomato puree and soy sauce

Step 8

Stir well and pour into the ovenproof dish

Step 9

Mix the topping ingredients and sprinkle over the lentil mixture

Step 10

Bake in the oven for 30 minutes and serve with a salad
