Blackberry coconut jelly

Ingredients

  • 1 can coconut milk
  • 300g caster sugar (or vanilla sugar) (if you use caster sugar add 1tsp of vanilla extract)
  • 4 packets (sachets) gelatin
  • 350 grg blackberries
  • 200ml warm water

Preparation

Step 1

Pour the gelatine in the warm water and stir till it is fully incorporated.

Step 2

Warm up the coconut milk in a pot and add half the sugar. Stir well. Bring to boil.

Step 3

Stir in half the gelatine mixture and let it boil for 2-3 more minutes.

Step 4

Pour 1/3 of the mixture in the jelly mould and put it in the fridge. It will take about 2 hours to set.

Step 5

Start the blackberry jelly by placing the blackberries in pt with 100ml of water. Let it boil for about 10 minutes.

Step 6

Sieve the juice into a bowl and pour it back in the pot. Bring to a boil and add the rest of the sugar and gelatine mixture. Boil for 2 minutes and let it cool a little bit.

Step 7

Once the coconut layer has set you can add the first layer of the blackberry jelly. Place back in the fridge to set. Keep adding the jellies in layers till you used it all.
