Baked Peaches with Raspberries and Amaretti

Ingredients
- 4 ripe peaches or nectaries halved and stoned
- 4 ozs raspberries (125 grams)
- 8 ozs mascarpone cheese (250 grams)
- 1 tablespoon almond liqueur
- 6 amaretti biscuits, crushed
- runny honey – 1 – 2 tablespoons

Preparation
Step 1
Put peach halves in shallow ovenproof dish, cut side up. Spoon raspberries into the centres and over the top.
Step 2
Mix together mascarpone, liqueur and crushed biscuits in bowl and spoon over peaches then drizzle with honey.
Step 3
Place in preheated oven (200C) for 10 minutes or until mascarpone has melted – spoon into bowls and pour the sauce and raspberries over, serve immediately.
