- 2 Pork chops or loin
- 2 Apples
- 1tbsp Sugar
- 450g Potatoes, peeled and cut 1cm cubes.
- 3 tbsp Oil
- 250ml Chicken Stock
- 100ml Double Cream
- 1tbsp Mustard (any will do, use your favourite. I’ve used wholegrain)
Roast pork with apples & mustard

Heat half the oil in a large frying pan
- 1 tbsp olive oil
- 3 eating apples
- 500g pork fillets, sliced into medallions
- 200ml reduced-salt chicken stock
- 1 tbsp wholegrain mustard
- 1 tbsp chopped sage leaves
- 2 tbsp half-fat crème fraîche

Cut the vegetables into equal cubes (potatoes, cougette, carrots, leeks)
- 1 Roast pork tenderloin,
- 3 leeks,
- 8 carrots,
- 1 courgette,
- 10 medium potatoes,
- Mustard,
- 1 red onion,
- 2 cloves of garlic,
- 1 vegetable stock cube,
- Thyme.
