Fruit Coulis

Pruee the fruit, caster sugar and lemon juice (using a blender is the quickest method)
- 250g Fruit (berries make a very tasty coulis)
- 50g Caster sugar
- Juice of half a Lemon
Raspberry Coulis

Blend the raspberries and sugar to a rough pulp by hand
- 1kg raspberries
- 200g caster sugar
- (plus 50-100g extra according to the fruit's sweetness, or personal preference)
- Makes 0.6 litre
