Homemade paste that will keep in the fridge, handy for when you want to knock up a quick green curry.

Ingredients
- 1/2 tsp ground cumin
- 1+1/2 tsp ground coriander
- 3 green chillies
- 3 tsp root ginger
- 4 tsp garlic
- 3 lemongrass stalks
- bunch of fresh coriander
- zest of 1 lime
- juice of 2 limes
- 2 tbsp olive oil

Step 1
Place all of the ingredients into a food processor and blitz into a smooth paste.
You can use already pureed lemongrass from a tube, about 2 tbsp.
Multiply the quantities if you want to have more on hand.
(no need for cooking until you make the curry)
