Step 1
In a bowl soak the raisins in the brandy for 30 minutes.
Preheat the oven at gas mark 6 (200 ° C).
In a bowl whisk the eggs and sugar for 4 minutes. Add the cream. Stir in the flour gradually, butter (and the yeast if you are using plain flour).
Step 2
Add the raisins and the brandy. Grease and lightly flour a cake tin, pour in the batter and bake for 40 minutes.
Turn out onto a wire rack to cool. Serve with jam and / or honey.
