'C-Ellie-Bration' Jean's Cheesecake

You will need a loose bottomed tin with greased sides and the bottom lined with baking parchment. 
Bake for 25 mins on reg 5, 375 F, 180 C or 160 fan oven.
Whilst cake is baking, mix together by hand:
300 ml sour cream
50 g caster sugar
half tsp cornflour

            Ingredients
- 7 digestive biscuits (light digestives can be used) crushed in bag with rolling pin. Place biscuits smoothly on bottom of tin.
 - 450 g curd cheese
 - 3 eggs
 - 150 g caster sugar

Preparation
Step 1
Mix together with hand mixer or processor and pour onto biscuits. 
When cake is cold, pour sour cream mixture on top, smooth, and place back in oven for 5 minutes on reg 3, 300 F, 150 C or 140 fan.
When cold, place in fridge until next day.
