Ingredients

  • Hob nobs
  • Ginger nuts
  • 2 packs of skittles
  • I can't believe its not butter
  • 3 x 300g full-fat soft cheese
  • 250g golden caster sugar
  • 3 tbsp plain flour
  • 1½ tsp vanilla extract
  • zest from a lemon
  • 1½ tsp lemon juice
  • 3 large eggs, plus 1 yolk
  • 200ml sour cream
  • Coffee grinder or similar

Preparation

Step 1

Crush your biscuits into a powder mix with buttery spread and place in a butter lined in and pre bake in the oven at 180 for 10 minutes

Step 2

Beat the cheese until its soft and creamy and then whisk in the sugar slowly, repeat this process to incorporate the flour and a little salt if you desire

Step 3

Whisk in the vanilla, lemon juice and zest along with the eggs one at a time, with the extra yolk for the new york flavour Once this is completed gently fold in the sour cream, don't fully mix this yet as further mixing is to be done and you don't want to over whisk the mixture.

Step 4

Seperate the mixture into 5 (correct at time of print) servings, one for each colour of skittle, seperate your skittles by colour and place into your coffee grinder to create the base for the colour. You may save some powder from each for sprinkling on top for decoration along with a couple of individual whole skittles.

Step 5

Whisk each of the 5 mixtures with thier skittle powder to incorporate the colouring into the mixture. If you wish to do this the harder way you can beat the mixtures into the cheese before step 2 but this will create more work but allow you to leave the colours to infuse for longer.

Step 6

Once you have your mixtures prepared pour them one at a time into the center of the dish, adding the next colour will push the previous further towards the outside and create a rainbow effect throughout the cheesecake

Step 7

Bake at 140 degrees for 20 minutes until you can knife the center without liquid mixture attaching, once this is done remove from the oven to gently cool.

Step 8

Once cooled sprinkle the remaining skittles powder over the surface, if desired boil down some gelatine sweets to create a jelly surface to pour on top before this stage for a truly special cheesecake.

Feel free to mix the topping powder with some crushed popping candy to give your guests an extra fizz to thier dessert.
