Egg cakes (Eierkoeken)

Egg cakes is a traditional Dutch snack and can be eaten without or with additional toppings (e.g. Nutella)
Ingredients
- 100g plain flour
- 100g granulated sugar
- 2 eggs
- 1 straightened teaspoon of baking powder
- Optional: add the half of a lemon peel OR 1 1/2 teaspoon of cinnamon to add a different flavor

Preparation
Step 1
Preheat the oven to 160°C (non fan-assisted) and prepare the baking tray by putting baking paper on it
Step 2
Beat the eggs and sugar until creamy
Step 3
Mix the baking powder and flour and sieve this into the egg mixture
Step 4
Mix all ingredients using a spatula or wooden spoon for best result, this does not require extensive mixing; once all is properly mixed you're done
Step 5
Spread the dough evenly on the baking tray, use a dining spoon for this, ensure there is enough space between them as they will expand during baking
Step 6
Put the tray in the oven for roughly 10 minutes, once golden brown the cakes are done.
Do not keep the cakes in the oven too long or they will become dry.
You can use Nutella or other spreads as topping but they are a good snack without those as well
