- 25g of caster sugar to cover

Step 1
Prepare the oven at 200°C
Step 2
Place eggs and sugar in a mixing bowl and whist together until mixture is thick and creamy and the mixture leaves a trail when the whisk is removed. (The mixture should have at least doubled in volume)
Step 3
Fold in sieved flour carefully, using a metal spoon or a silicone spatula . Pour into a prepared tin and cook for 7-10 minutes.
Step 4
When it is cooking, prepare table. Place a damp tea-towel on table, cover with greaseproof paper dredged with the extra 25g of sugar.
Step 5
When the roll is cooked, turn straight on to the prepared surface. Remove the greaseproof paper. Trim edges of sponge if needed.
Step 6
Quickly spread with jam and roll it up. Place on a cooling rack.
