- 1kg Potatoes
- 200g Cheese
- 12 rashers of Bacon
- 50g Butter
- Breadcrumbs
- Flour
- Eggs

Preparation
Step 1
Chop potatoes leaving the skins on and boil for around 15 minutes or until ready to mash
Step 2
While potatoes are cooking chop the bacon and fry until crispy. Mix into mash along with butter
Step 3
Make mash into fist sized balls and push a large cube of cheese into the centre.
Step 4
Bread the mash balls by dipping first into flour then into eggs then breadcrumbs. To stop your hands getting to caked use one hand for flour and eggs and the other for breadcrumbs.
Step 5
Heat a large pan of oil for deep frying the winners. Test the oil is hot by sliding in a small square of bread. The bread should brown in a few seconds. once the oil is hot slide in the winners and fry until golden
Step 6
Once the winners have been fried preheat the oven to 180C/gas mark 6. Cook the winners on a baking tray for 15 minutes
Can be made into rats on sticks by moulding into a more rat like shape and inserting a fried baby corn as a tail
