Delicious cheesecake! Hint: it's dairy and egg free.
- Spéculoos + 3 tbsp oil
- 100g of firm tofu or 1 tbsp arrow root
- 400g of soft tofu
- 1 can of coconut milk
- 1 tsp agar agar (or any gelatin substitute)
- 2 tbsp soy milk in powder (or any powdered milk substitute)
- 1 tsp arrow root
- 5 tsp coconut oil
- 3 tbsp rice flour
- 4 tbsp of sugar + 2 tbsp of agave syrup

Pack the speculoos and the 3 tbsp oil into the bottom of a spring form mold and along the sides if there is enough of the "crust dough".
In a separate bowl, mix the rest of the ingredients well.
Pour the mixture onto the crust in the mold.
Cook it in the oven at 180° for 40 minutes.
Leave it in the fridge for one hour.
You can put some jam or fruit puree on the cake and it's delicious!
