Delicious cheesecake! Hint: it's dairy and egg free.

  • Spéculoos + 3 tbsp oil
  • 100g of firm tofu or 1 tbsp arrow root
  • 400g of soft tofu
  • 1 can of coconut milk
  • 1 tsp agar agar (or any gelatin substitute)
  • 2 tbsp soy milk in powder (or any powdered milk substitute)
  • 1 tsp arrow root
  • 5 tsp coconut oil
  • 3 tbsp rice flour
  • 4 tbsp of sugar + 2 tbsp of agave syrup

Step 1

Pack the speculoos and the 3 tbsp oil into the bottom of a spring form mold and along the sides if there is enough of the "crust dough".

Step 2

In a separate bowl, mix the rest of the ingredients well.

Step 3

Pour the mixture onto the crust in the mold.

Step 4

Cook it in the oven at 180° for 40 minutes.

Step 5

Leave it in the fridge for one hour.

Step 6

You're done!

You can put some jam or fruit puree on the cake and it's delicious!
