Cornbread

Ingredients
- 2 cups white corn meal
- 1 cup flour
- 2 eggs
- 2 T baking powder
- 1 t salt
- 2 cups buttermilk (approx)

Preparation
Step 1
Mix all dry ingredients.
Step 2
Coat inside of cast iron skillet with olive oil. Add skilled to oven and let it preheat with the oven to 375
Step 3
Add eggs to the dry mixture and slowly mix in the buttermilk. Do not add too much to make the mixture too runy, but add enough to allow the mixture to combine to a semi liquid state.
Step 4
Remove heated skillet from oven, pour mixture into the middle of the pan and tap pan to level out the mixture.
Step 5
Add back to the oven until bottom is browned. Turn the oven off.
Step 6
Flip the skillet over into a pan to flip the cornbread and put the skillet back in the oven with the cornbread top side down.
Step 7
Remove from oven in 5-10 minutes or when oven cools.
Step 8
Serve.
