Zucchini Casserole

  • 1/4 C oil
  • 1 clove garlic
  • 4 medium zucchini
  • cut in 1/4" slices
  • 1/4 tsp basil
  • 1/4 tsp oregano
  • 3/4 C shredded cheese
  • 4 tomatoes
  • sliced
  • 1/2 C bread crumbs
  • 2 tbsp melted butter

Step 1

Preheat oven to 350F. Heat oil in skillet, and saute garlic.

Step 2

Add zucchini and lightly cook on both sides.

Step 3

Blend basil and oregano with shredded cheese.

Step 4

In an oiled casserole dish, layer zucchini slices, cheese, and tomatoes. Sprinkle with salt, and repeat layers.

Step 5

Mix bread crumbs with melted butter, and sprinkle on top of the casserole.

Step 6

Bake until browned on top, about 30 minutes.
