- 1 large squash
- 2 onions
- 1 Tablespoon Oil
- 1/2 pack cooking chorizo (remove the skin for a smoother soup)
- Crushed garlic (one clove or a teaspoon of lazy garlic)
- Vegetable or chicken stock cubes
- Boiling water

Preparation
Step 1
Peel and chop the squash and onion and soften in the oil
Step 2
Add chopped chorizo and garlic, sweat off until the chorizo releases it's oil
Step 3
Add stock and simmer until the vegetables are tender
Step 4
Allow to cool a little before blending down to a smooth soup and serve.
