  • 300g self raising flour
  • 300g caster sugar
  • 4 xl eggs
  • 300g marge slightly melted
  • quarter cup of strong coffee
  • 100g chopped walnute plus more for decoration
  • for icing
  • butter
  • icing sugar
  • walnuts
  • instant coffee

Step 1

place marge in microwave onmedium for 30 seconds just to melt slightly

Step 2

place flour sugar and marge into a mixer add eggs and mix for 2 mins add coffee gradualy as your mixing if needed adda dash of milk

Step 3

mix in walnuts by hand

Step 4

seporate mixture into 2 8 inch cake tins that have been lightly greased bake on 180 degrees 160 for fan oven for roughly 25mins insert skewer into centre of cake ones comes out clean remove cake from oven and cool

Step 5

for the icing add 2 heaped spooms of instant coffee and and 2 tablespooms of water to desolve

Step 6

mix around 100g of butter and 200g of icing sugar adding coffee as you go keep mixing untill smooth butter icing is achieved

Step 7

sandwich both cakes together with a healthy dollop of butter cream using the remainder on the top of cake and cover in walnutes

melting the margerine at the beginning creates a moister cake
