Ingredients
- 4 large red onions
- Quarter cup olive oil
- Half tsp salt
- 2tblsp balsamic vinegar

Preparation
Step 1
Thinly slice onions, place in frying pan with oil and salt, cover and cook for 5 mins turning frequently. Turn down heat cover and cook for 30mins till soft
Step 2
When onions are well browned and soft, remove from heat add vinegar depending on how thick you want it add more or less vinegar
Step 3
Serve hot or cold, place in jar or container with lid
Can use other onions, I just like the taste of red onions, can be used for alsorts of occassions, ie brushetta, as a pickle for ploughmans lunch, in sandwiches etc
