- 1 large can enchilada sauce (or homemade)
- 1 onion
- Package of beef or veggie chorizo (optional)
- Other veggies of your choice
- Refried black beans
- Cheddar and pepperjack cheese
- Tortilla chips (optional)

Step 1
Preheat oven to 350
Step 2
Fry up onions and other veggies and meat
Step 3
Pour a small amount of sauce into bottom of large lasagna pan, enough for thin layer
Step 4
Layer tortillas on bottom, Spread layer refried black beans, Spread layer of veggies, Layer of meat, Layer of cheese, Layer of crushed tortilla chips, Layer of a little sauce, Layer of tortillas
Step 5
Repeat until pan is full, ending with tortilla, then remaining sauce, then lots of cheese
Step 6
Bake for 30min or so until cheese is starting to brown
Step 7
Let sit for about 5-10mins before serving
