Light and fluffy strawberry Meringues

Ingredients

  • 4 Egg whites
  • 1/2 tsp Vanilla
  • 1/4 tsp Cream of tartar
  • 6 tbsp Sugar
  • Either frozen or freeze dried strawberries crushed as much as possible
  • Red food coloring
  • Piping bag
  • Oven tray
  • Grease proof paper

Preparation

Step 1

Crush the strawberries. If using frozen do this whilst they are still frozen, to as small as possible. If using freeze dried the crush into a dust

Step 2

Separate the egg whites then place into a large bowl

Step 3

Add the vanilla and cream of tartar

Step 4

Whisk until thick and stiff, and until you can make strong peaks

Step 5

Add the sugar a tbsp at a time, whisking each time

Step 6

Add the strawberry dust/crushed strawberries a tbsp at a time whisking it in

Step 7

Turn the piping bag inside out and randomly place a streak of red food die, turn it back to the right way add the meringue mixture

Step 8

On a prepared baking tray pipe the meringue mixture however you chose into individual portions

Step 9

Place in the oven on Gas mark 1/2 and cook for about 90 mins

Step 10

Place on a cooling rack and enjoy when you're ready
