Gourmet Potato Salad
Better than your standard potato salad, full of flavour and texture as well as visually impressive

Peel and dice your potatoes and boil until the surface is light and fluffy, rinse and drain and allow to cool in the refridgerator.
While the potatoes are cooling finely dice your onions and cut your red peppers as small as you can salsa style, mix these into your mayonaise along with the chopped chives
Once the potatoes have cooled stir into the mayonaise until fully coated and all ingredients are mixed.
Squirt a little dijon mustard on one side and a little hp sauce on the other and use the handle of a fork or spoon to ripple these into the mixture.
Serve on a crispy lettuce leaf for a stunning visual appeal.
For extra texture use 50% roasted potatoes in the mixture, and if you're feeling truly adventurous add some cruitons.
Also feel free to pour melted butter over the potatoes while they cool along with some salt and pepper in order to infuse an extra buttery element into the potatoes.
