- 1 lb demerara sugar
- 4 oz butter or margarine
- 1 tbsp golden syrup
- 1 1/4 gills (around 180 ml) water

Melt butter in saucepan, add water, syrup and sugar.
When the sugar has melted, boil mixture steadily till a little of it, when allowed to set in cold water, is quite crisp. This will take around 1 hour and 20 minutes.
Pour into a buttered tin and leave till cold.
