Cheese Potato and Bacon Pie

A great family lunch this can be served straight from the oven with Baked Beans or eaten at room temperature with a salad

Ingredients

  • 100g Plain Flour
  • 50g Butter (or 25g butter and 25g lard)
  • Pinch of Salt
  • Water to bind
  • 5 medium potatoes peeled and chopped
  • 2 tablespoons butter
  • 4 tablespoons milk
  • 1 medium onion finely diced
  • 150g chopped bacon
  • Oil for frying
  • 150g mature cheddar grated
  • good pinch of dried mixed herbs
  • Salt and freshly ground black pepper to taste

Preparation

Step 1

Sift the flour and salt into a large bowl. Add butter and rub in to form fine breadcrumbs. Add water until the dough binds together. Knead gently to form a smooth ball. Roll out to about 5cms larger than your dish. Line your dish but do not trim off the edges. Cover with clingfilm and chill for about 30 mins.

Step 2

place potatoes in a pan of cold water. Bring to the boil then simmer for 20-25 mins until ready to be mashed.

Preheat oven to 200c/Gas 6

Step 4

Fry the onions and bacon with a little oil until cooked. Remove from the pan and set aside.

Step 5

Once the potatoes are soft mash with the butter and milk. Miix in the herbs, salt and pepper, bacon, onion and 100g of cheese and set aside.

Step 6

Trim pastry and line with greaseproof pape. Top with baking beans. Bake for 15 mins. Remove paper and beans and bake for a further 5/10 mins.

Step 7

Fill pastry case with the potato mix. Sprinkle on the remaining cheese and return to the oven for a further 15 mins until golden brown.

Feel free to add or remove ingredients from the potato filling. Try making a veggie version by leaving out the bacon and adding some mushrooms, peppers and sweetcorn.
