Mustard Bean & Potato Hash
A warm and spicy hearty supper for vegetarians
- 4 large potatos (diced small approx 2cm square)
- 2 cans cannelli beans (or bolotti
- aduki etc.)
- 1 red onion
- 3 teaspoons of wholegrain mustard
- 1 teaspoon of cumin powder
- Olive oil
- knob of butter
- Salt & Pepper

Fry the onion in olive oil for 3 minutes, add the diced potatos, 2 drained tins of cannellini beans and fry for 10 minutes, moving and stiring regularly.
Put a knob of butter in a separate bowl with the cumin and mustard and mix togther, then put this in the pan with the beans and potatos.
Fry together, stiring regularly for a further 5 minutes until everything is brown and crispy.
Serve in a bowl with either tomato sauce or a bit of garlic mayonaise.
