Maple Balsamic Sweet Potato Salad

A warm hearty salad for the autumn time, scale down for a starter or served with warm crusty bread as a midweek supper.

Ingredients
- 1 Sweet potato.
- 1/2 bagSalad leaves.
- 8 Mixed cherry tomatoes.
- 25g Butter.
- 2tbsp Maple syrup.
- 1tsp Balsamic vinegar.
- Salt/Pepper.

Preparation
Step 1
Prick the sweet potato all over with a knife wrap in kitchen towel and microwave for 3 minutes.
Step 2
In a salad bowl pop a handful of salad leaves and as many halved cherry tomatoes as you want. I like yellow ones that are available all year round now not just in summer.
Step 3
In a little bowl add a glug of balsamic, lemon juice (optional), maple syrup and salt/pepper to taste.
Step 4
If your sweet potato is done, a large potato may take another minute or so, then peel and cut into cubes toss in a little butter and 1tbsp of maple syrup.
Now scatter the sweet potato on top of your salad leaves pour over a few tbsp of the dressing and consume with delight!
