Step 1
Toast cumin for about three minutes in the pan;
Add oil, salt and pepper then onions and soften for five minutes on a low heat;
Step 2
Add beans and chillis, then cook on a low heat for ten minutes.
Step 3
Add coriander, cook on a low heat for a three minutes.
Step 4
Serve with slightly buttered pitta bread.
Make sure the cumin is toasted and the oil hot before the onions are added, but cook only gently from then onward.
This is a very cheap, vegetarian dish that can be ready in twenty minutes from scratch. Ideal for students and you can vary the spices to taste. An Indian standard.
