Ingredients
- water
- 100g salted butter
- 100g flour
- 100g hard cheese (gruyere, cheddar...)
- 4 eggs
- A pinch of salt
- spices

Preparation
Step 1
Boil salted water with the butter.
Step 2
Stir in sifted flour and spices.
Step 3
Mix with a wooden spoon.
Step 4
Leave the preparation on the heat (stirring constantly).
Step 5
Remove from heat.
Step 6
Add the cheese.
Step 7
Leave to cool until warm.
Step 8
Add eggs one by one. Knead the mixture from bottom to top.
Step 9
Form small balls, cook in a hot fryer (fat or oil).
Step 10
When they are puffed and golden, blot on paper towels.
