- 1 cubed sweet potato
- 1 tbsp olive oil
- 1/4 C quinoa
- 1/2 C black beans (or kidney beans)
- 1/4 diced red pepper
- 2 C green vegetables (of your choice)
- 1 tbsp dried cranberries (sultanas work well too!)
- 1 tbsp flax seeds
- For the dressing
- 1/4 mango
- 1 tbsp balsamic vinegar
- 1 1/2 water
