Coffee cupcakes with espresso buttercream

Airy and chocolaty coffee cupcakes!
- For the cupcakes
- 75 gr butter
- 300 gr plain flour
- 100 gr cocoa powder
- 200 gr caster sugar
- 120 ml coffee (if you don’t have espresso you can just use instant coffee)
- 150 ml buttermilk
- 1/2 tsp vanilla extract
- 1 egg
- 1 tsp baking powder
- 1 tsp bicarbonate soda
- For the espresso buttercream
- 100 gr dark chocolate
- 150 gr butter (softened)
- 175 gr icing sugar
- 75 gr cocoa powder
- 1 tsp coffee powder (espresso or instant)

Indulgent coffee cupcakes with espresso buttercream
- 75 gr butter
- 300 gr plain flour
- 100 gr cocoa powder
- 200 gr caster sugar

I replaced the pasta in lasagna with courgettes and it came out delicious!
- 1kg leeks
- 1 kg spinach
- 3 big courgettes
- 4 rashers of bacon (optional)
- 200 gr cream cheese (I used ricotta)
- a glass of white wine
- 50 gr butter
- 4 tbsp flour
- 400 ml milk
Greek giouvetsi

A traditional Greek dish of chicken and pasta baked in the oven
- 1 whole chicken cut in pieces
- 1 can chopped tomatoes
- 2 tbsp tomato puree
- 300 gr orzo (or macaroni)
- 1 onion finely chopped
- 40 ml olive oil
- 60ml white wine
- 2 bay leaves and oregano
- 150 gr feta cheese
- cream cheese (optional)
Green vegetable soup

A healthy soup with broccoli and wild cabbage
- 2 tablespoons unsalted butter
- 1 medium yellow onion
- 1 bay leaf
- 1 carrot
- 4 cloves garlic
- 120ml dry white wine
- 2 – 3 medium heads of broccoli
- 750gr roughly chopped wild cabbage and/or spinach
- 4 tablespoons chopped fresh chives
- 1 1/2 littre organic vegetable stock
- 250ml milk (you can replace with double cream, I just wanted to be lighter)
- 1 tablespoon lemon juice (1/2 lemon)
- salt and freshly ground black pepper
- crème fraîche or sour creme (to garnish)
Butternut squash cake with jam

A butternut squash winter spiced cake with butternut squash-ginger jam
- 275g all purposes flour
- 650g caster sugar
- 4 eggs
- 350ml vegetable oil
- pinch salt
- 1 teaspoon baking powder
- 1 teaspoon bicarbonate doda
- 3 teaspoons cinnamon
- 1/2 teaspoon cloves
- 700g butternut squash
- 50g fresh ginger (ground)
- 300g cream cheese
- 200g icing sugar
Greek koulouri

Koulouri is sort of a bagel, less sweet
- 500 gr plain flour
- 30 ml olive oil
- 1 sachet (7 gr) dried yeast
- 250 ml lukewarm water
- 1 tsp salt
- 100 gr sesame seeds
Apple layered cake with maple syrup icing

- 240g Flour
- 280g Caster sugar
- 3 tablespoons Baking powder
- pinch Salt
- 80g Butter
- 240ml Almond milk
- 2 Eggs
- 1 teaspoon Vanilla extract
- 300g Apples grated (I used Granny Smith)
- 1 teaspoon Cinnamon
- 400g Cream cheese
- 80g Butter
- 100g Maple syrup (Adjust to taste)
Blackberry coconut jelly

- 1 can coconut milk
- 300g caster sugar (or vanilla sugar) (if you use caster sugar add 1tsp of vanilla extract)
- 4 packets (sachets) gelatin
- 350 grg blackberries
- 200ml warm water
